A perfect light but warm meal after your Yoga session before bedtime
Ovenroasted vegetables with Tahina

You are looking for a light meal after your Yoga session before you go to bed, but you don´t want to eat heavy and fatty food?
This is a simple but really delicious meal that you will love!
Prep time: 10 Minutes, Baking time: 20 Minutes
That´s what you need, but you can use any seasonal vegetables:
3 red onions
1/2 eggplant
1 yellow pepper
1/2 zucchini
5 mini carrots
4 tablespoons of olive oil
4 tablespoons of Tahini
1 teespoon of honey
1 lime
Salt, Pepper, thyme, rosmary, cumin
Preheat your oven to 200°C and prepare your tray with baking paper.
Peel the red onion and cut it into eight pieces.
Cut the eggplant, the pepper, the Zucchini and the caroots in big cubes.
Mix the olive oil with honey, salt, pepper, thyme and rosemary and toss the vegetables in it.
Make sure, all the vegetables are covered in oil and distribute them on your baking tray. Place it in the middle of your oven and bake for 20 minutes until the vegetables are nicely roasted.
Stir 4 tablespoons of Tahini with 6 tablespoons of water and 1 teaspoon of freshly pressed lime juice. Season with 1/2 teaspoon of cumin, salt and pepper as you like.
While your vegetables are getting their unforgettable roasted flavour you can take a shower.
When you come back simply take the roasted veggies out of the oven and place them nicely on your plate. Pour tahina over it and enjoy your perfect after yoga bliss meal!
